    Hypothetical question here -

IF Aer Lingus cancel my flight due to the bad weather, am I entitled to a refund? I'm thinking probably, but just a refund of the fare though, and not the taxes.

You should get a full refund.

If you have travel insurance I think it will be refunded

You don't need travel insurance in this instance - if it is cancelled you can rebook at no extra cost or get a refund. See here
