I know it sounds a little out there but is it possible? Like after an offline vs battle or an online ranked match you can save the replay of the match to the HDD. Is there an in game function to record a video the to HDD? Or can you dump the replay from the HDD (I guess it would be in a totally off format tho)

    Just curious

If Namco did it properly (assumes they can program ) the game records matches as keystroke records.
Meaning that the files are tiny, and mostly text; so for recording/yT, the files would need to be played back at 1:1 speed and captured from a PS3 while the game is running.

This is just a guess though (it's how Halo 3 does it IIRC)
