Salmon fillets

    Whats a good way of cooking frozen wild salmon fillets? I will be doing them in oven in tin foil. What herbs etc would go well with them? I'll have a know of butter on each too.

    Green or red pesto on top, whichever you prefer (red works better). You can also add some diced onions and peppers to the foil bag that you put in the oven and serve these with the fish.

    If you don't fancy pesto you could do add the following to the salmon fillets:
    knob of butter (small, don't make it too greasy)
    dill
    thyme
    parsley
    lemon juice
    crushed garlic
    black pepper
    salt

    pop it in the oven for approx 20 minutes and voila.
