Aer Lingus don't have an open return facility. You will have to book the return fare in advance or buy a single ticket and keep an eye on the return dates while you're away.

You could book the Flexifare though - it is much more expensive but allows free itinerary changes.

Ah flip, can anyone recommend any other airlines that do?

No matter what airline it is, a flexible ticket will always be expensive.
