    Out thismorning for quick 2hr walk, no pheasant but something for the pot anyway, should make a couple of small pies:) Here they are.

    yea id be happy alright, just anted to show what you can do with two birds like that, took me 1 hr to do the hole lot, pastry bought ready rolled. yea 2 quiche,ran out of pastry for tops...tasty:D

    Nice one, never tried game in a quiche before, I'd say it would be the business with some thick diced bacon in it.

    Do you have to look for the pellets when you clean the birds?

    You might get the odd pellet but they tend to be just under the skin - provided you haven't blown the bo11ox out of them!

    I've just cleaned out my opening day pheasant an hour ago and he was pristine - not a mark. :)

    Nope. pulland bang shoots them in the eye, so as to protect the meat.

    I suppose the gun of choice for mallard ducks are .22 LR bolt action with open sight?:D

    It has been a week ad a bit since the opening day...is 1 week about the right amount of time to hang it for? My colleague cooks them straight away but I heard some like it mature....?

    A lot of crap is spoken about hanging game. Hanging game by the neck until it is ready to fall off is nonsense and dates to the 1800’s – it took days to have game sent up from “one’s country estate” so a state of near putrefaction became fashionable, with so-called gourmets stating it was necessary as it improved the flavour. It also is dangerous to eat, more so if flies have got near it.


    Game must be hung, but only for long enough for rigor mortis to pass and for some denaturing changes to take place in the proteins in the meat. The time depends on the type of game and the temperature in which the game is hanging. For pheasant I grew up with the “Rule of 120” i.e add the average daily temperature in “old” degrees until they reach 120 and then it is ready for the pot. About 3 days in today’s weather. ‘Cept today, as bin day is Wednesdays and Sunday’s birds got done this evening – don’t want the innards around for another week. They will be fine.
    Two days minimum, max one weeke in my opinion.
