Looking for a good lamb curry recipe

    I've searched online and there are approximately 7billion variations but I don't know if any of them are any good.

    I'm looking to make a tasty curry somewhere in the medium to hot range (my wife doesn't go for really hot food).

    I would envision serving with rice and homemade naan bread.
