am i right that the longer you leave it the stronger the taste?
does the wheather have much affect?
should i be leaving them longer as the temp drops?

If the weather stays this mild 2 days is more than enough, if it gets colder 4 days from kill max.

    Have to get one first.

Generally id hang for about 4 days. Had a snipe hanging in the shed last year and forgot about it for about 10 days - it was lovely:D
If the weathers pretty warm, you wouldnt want to be leaving it too long. If you get frost though birds should keep pretty well for a fair while.

hang them a day or two .soak them in salt water for a nite .cook or freeze after that .

i skin pheasants. just the breast .

wrap in a smoked rasher or two drop of olive oil cover in foil and cook slowly .

make a cream sausce or buy it .
baby sweet corn ,sweet peas ,peppers all sliced tin .pasta .dont over cook the veg or pasta .i just drop the veg into the pasta for 2-3 minutes .
    slice the pheasant .
a little chillie to warm it .
garlic bread ,nice red and the open fire . that will be my eve next wed with any luck.

Found a nice sounding recipe for pheasant carbonara. All I have to do now is acquire a few fresh pheasants off someone and I'll be sorted. Going to have to get myself a shotgun and try get involved with the local gun club too though, want to get into that area of shooting for my own table.

Heard a few people swear by teal, including my dad, who shot them on the foreshore of Carlingford Lough as a kid.
