How to protect myself in potential dispute

Hypothetical situation here but lets say I felt that my employer felt my services were no longer required on the basis knew that he could receive the same service from another member of staff for a much lower salary. Rather than being made redundant my employer creates a scenario in which I am ultimately dismissed i.e. performance related issues, setting unattainable deadlines and goals.

Is there anything I can do to protect myself in the event that this scenario becomes a reality e.g. take notes, keep copies of e-mails (legally) etc.
