Recently got my first carbon framed bike and was wondering if force was applied to metal bottle cages from the side (from a crash or accident etc) would they do a lot more damage than plastic?

Maybe, maybe not. Most likely the cage will just get bent.

In the event of a side-on collision, you'll have more worries than scratching your frame.

In any case, most people use carbon cages on carbon bikes for aesthetic reasons.

The bottle cage will bend WELL before it would do any damage to the frame. Very unlikely that it would contribute to frame damage (although you could well have frame damage independently from that sort of side impact.) As Lumen says carbon cages are mainly for aesthetic reasons (and a TINY bit of weight saving.)
