Off-road tyres / Cyclocross wheels

Last year, I purchased a single-speed Tricross (to which I later added a fixed cog) as a replacement for my old MTB which I had been using as my one bike for commuting. It's renewed my love of cycling and since last October, I've clocked up around 1500-2000km on the roads. While I don't go mountain biking on it, I also do a fair bit of light off-roading on it (canal tow-paths, Phoenix Park, cliff paths around Howth & Bray Hill).

As I bought the bike primarily for commuting, the guys in Cycleways swapped the off-road tyres for a pair of Armadillos. However it's a bit dodgy going off-road with slicks if the surface is wet from residual rain and I figured I should buy a proper set of tyres for the purpose. I'd appreciate any recommendations from other cyclocrossers on good tyres for off-road use.

I was also thinking I might get a spare front wheel so that I can very quickly swap the different tyres around when heading out for a cycle so recommendations on good rims would also be appreciated. I'd imagine it shouldn't matter too much for the hub whether it'll be used on or off-road.
