lastminute.com tend to have some good deals lately

I've stayed in the Maldron Hotel twice - very nice hotel, and only a short walk to the city centre. Parking in the hotel is rare as they have a tiny car park but there is a multi-story just around the corner from it.

If you're staying in the city, Jurys hotel on the Western Road is gorgeous. The Clarion is also nice.
Just outside the city, in Douglas, the Rochestown Park Hotel is fab,
and if you wanted to stay outside the city altogether (which I know is unlikely, given this is the Cork CITY forum - but just in case) The Sheraton Fota Island is fab, as is the Carlton in Kinsale - Kinsale is well worth spending a few days in.
