Use iTunes to update it to 3.0

See if it works on O2 while not jailbroken

If you've never used your SIM with a smartphone before, check that it is a 3G one and that you're correctly provisioned for data by O2 (not just a price plan, but the data product itself).

The first time I jailbroke my O2 phone - I got no signal either.

Restored to original state in iTunes - second time worked fine.
