Storing potatoes for sowing next year

    I know this is pretty early to be askin' but what are the best conditions to keep spuds in over winter in order to sow them in spring? I got two sets of spuds this time round. One set had small budding roots with a little leaf, and the other set had longer roots. Turned out the stubby little roots are doing much better than the longer roots. Anyone know how I can store the spuds myself properly?
