just wondering if your pulled over or going through a checkpoint and your driving licence isn't on you do you still have a number of days to produce it or do you have to legally have to have it on you?

Legally you're ment to have it on you all the time.

As for producing, I think this is garda discretion.

Happened to me a few times. The vast vast majority of gardai will excuse you for not having the license on you. I think you're given 10 days to produce at a garda station of your nomination - which you have to declare to the garda who stopped you - he'll/she'll take note of where you intend to produce.
