Sadly there is no easy way to this, so the simple answer is no you cant put pdfs on your Ipod classic.

you can add text files but they are limited in size

You could go crazy and install linux for ipod on it and then look for a pdf reader http://ipodlinuxinstl.sourceforge.net/

I have never done this so this is as helpful as I can be.
