ok thanks, would the game dealer pay for it?

Yes, but the prices I hear are quite low (on the order of €1.80/lb or so).

oh, what's that for? or is it for all meat?

That's what I was hearing for venison. Note though, that's what I was hearing - I don't hunt myself, so I'd listen to the others for better details than you'll get from me :)

For venison the game dealer in wicklow pays 1euro per kilo for animals under 20kg and 1.50 per kilo for animals over 20kg.

minus skin ,head ,feet, strike damage it would work out on average 14 euros a sika hind and 30-35 a sika stag .

And that my friends is Euro for Euro cheaper than dogfood. You're better of giving it away to friends and family.

Would it be legal to sell to frinds/family. I'm sure there would be a market for it. Nature's best.

To sell to friends/family? Probably not.

Or to complete strangers!!! (hopeful chancer)

Who will do a great job of cooking it and give the hunter dinner!!!

I've never sold any to friends or family. What I do is give it out in return for favours which could be from a load of beef in exchange to a round of golf (not that I play) but I could pass that on in return for another favour.

    Depends really.

If you can only sell to a game dealer then you can only sell to a game dealer!

You can give it away free!! to anybody.

You should put up a thread closer to the season I'm sure people will only be too happy to supply you with some excess they may have.

Just apply for a gamedealers licence, its free and very straight forward. You might want to check with Dept of Ag for other restrictions.

I like to hunt (not to sell). I also like to play golf. Don't have new clubs or sit around in the clubhouse. Both require precision and a cool head. Don't kid yourself, good golf and good riflework are very similar.

I will, any of you guys that work in Dublin and want to get rid of any excess I would be delighted to take it off you, I have excellent rubs and marinades if you want to sample.

    When is the next season?

I'd be interested in your rubs and marinades.

No worries, delighted to share, this is the best one for wild meat, got it off a recipe for roasted pork steak in a Jamie oliver book.

Crush a handfull of fennel seeds in a pestle and mortar, mix in some really finely chopped rosemary, maldon salt and ground pepper, works really really well as a rub before bbqing. If you stab parts of the meat and push parts of the mix in its lovely.

Old bay is available online, not great for strong meat, but brilliant for fish. EDIT... Here is a good site for old bay and other products... www.MarylandDelivered.com

This stuff is excellent. http://www.maldonsalt.co.uk/ It's a must for good meat. Big difference from table salt.

Schwartz do a really really good Blackened Cajun Seasoning, this mixed with Worcester sauce is amazing. Try and get someone you know to get the catering pack in a wholesalers. Here it is in this link so you know what it looks like.

    http://www.shop.edirectory.co.uk/halls_kendal/863/mia/d/schwartz+cajun+seasoning+550gm/pid/3347100

Worcester sauce is amazing when used with any spice or herb, the trick is to put it into a spray bottle and spray the meat every now and then! They do this in South Africa all the time, keeps the meat moist. You can experiment and ad some smooth mustard and some oil, or anything you fancy, give it a good shake and spray away.

Paprika on its own (or mixed with the reliable Worcester sauce) is magic.

I have more at home, I will update this....

Thanks for that. My son loves cooking and will try these out no doubt. and with all this good weather we are getting looks like the barbi can get dusted off.

I love worcester sauce, olive oil, and honey and salt for a simple marinade. Envy all those who are into the Real side of herbs and marinades though, I 've not the patience for it all. I think it's cos I lack the sense of smell so don't really appreciate all these things.

Do you have one yourself John?

It's none of my business but I think John could find himself in a situation that could be deemed to be a conflict of interest when he had a dealers licence. It would be like a Garda with a pub licence..

Yeah, they are pretty basic, but they make a tonne of difference. I really want to get further in to it. I will update in the recipe sticky when I learn more. Are you near a big town or city? The Asian shops are unbelievable for value in Dublin anyway, big bags of herbs for pennies, I mean ten times the size of the little glass schwarts jars and dirt dirt cheap.

I have this book http://www.barbecuebible.com/ and there is a whole chapter on rubs and marinades. I have tried some of them and the tastes are amazing. He dedicates a lot of the book to game and game cuts, what part of the animal the cuts are from etc... so you anyone that butchers their catch will love it.

Nice one. Nearest to me is Galway, but I hate shopping, would sooner shovel S***, lol,
    NOT your typical woman.

Would love a herb garden though. Even though I can't smell would be good for kids. Oh and a polytunnel, so have to have one. Real tomatoes and lettuce, what a difference.

Brothers made one when we was kids, back in the good old days when we used to go shooting. Oh the memories.

Is it hard to join a gun club ?
