Elderflower Cordial

    Anybody got a nice recipe for this or other elderflower related recipies? Our elderflowers at home have just started to bloom and I'm determined to do something with them this year instead of letting them go to waste! :D

    Darina Allen has a great one but I cannot find it on the net. I made it last year.

    Darina Allen - Elderflower Syrup (Makes about 1.25 pints)

    175g caster sugar
    1 Pint water
    6 heads of elderfower in full bloom
    zest and juice of two unwaxed, organic lemons

    Put sugar and water in saucepan over medium heat. Stir until sugar dissolves, add the elderfowers, bring to the boil for 5 minutes. Remove from heat and add lemon zest and juice.
    Cover, set aside and leave to cool. Leave to infuse in a cool, dry place for 24 hours.

    Strain and bottle in gin/vodka bottles. Seal well. Dilute as desired.

    Eh Cullen is her nephew, not even by blood and Sully isn't even related.

    BTW have you thought of Elderflower fritters?

    Saw it yesterday in The Health Store in Dundrum shopping centre if that's any good to you.

    Most health shops sell elderflower cordial. The odd time you can find nettle cordial there as well which is even nicer..

    You could always try elderflow champagne? i rememeber seeing it on river cottage.

    i think I seen Elderflower and berry jelly on come dine with me before. type it into the channel4.com/food search engine and im sure you'll get a few recipes.
