Try ringing up local horticulturists in the Golden Pages and offering to work along side them? Otherwise you could offer a local old people's home or school or something your skills for cost?

You could try a nursery, a golf club even and get taking to the head greenkeeper. Perhaps even Teagasc or Coillte.
