Can it be done: Most carbon frames being higher end bikes designed mainly for racing/sportifs don't have the mounting points for front and rear panniers. You me be able to use P-Clips but I'm not sure how secure they are in terms of weight. There may be frames out there that allow this, but it depends on whether or not you are buying or just looking to use an existing frame.

Should it be done: You don't really need me to tell you the answer to this...

EDIT: The Tubus Fly seems to get a lot of buzz.

If the frame has the mounting points you would be fine- there are a very small number (generally designed for audax) that do. Most likely you don't though, in which case you could attach a rack with P-clips. No way would I do this on carbon seatstays, the rubber tends to come off the P-clip and so you are talking about clamping a sharp bit of metal bearing significant weight onto a carbon tube.

Alternatives would be a seatpost mounted rack (on a non-carbon seatpost) or a large saddle bag (these come up to small rucksack in size.)

    a seat clamp like this:

To provide the usual seat stay mounts and a rack that mounts to the wheel axle. This is the only one I came across, but it is not designed for the seat stay mounts:

If you can get something that mounts to the wheel axle, there wouldn't be a lot of stress on that seat clamp, the seat post or the seat tube, I think it would be fine.
