After a quick chat with the wife this is what we suggest :

    Roscoff - Vannes - Angers - Tours - Blois - Poitiers - Angoulême - Bordeaux - Cahors - Toulouse - Carcassone - Montpellier

This would be my basic route and involves 2 hours driving per day over 8 days. I know you want to avoide cities but this is just to give you an idea of the route I'd take. Starting at Rocoff you have 2 days on the Brittany coast eating crepes and drinking cider until you head west towards Blois visiting the famous castles of the Loire.

At Blois head south to Angoulême region where the wine changes from the crisp whites of Loire to the Bordeaux reds and you'll get another chance to see the Atlantic before heading west towards Cahors. This is a wonderful town where the medieval streets are far too small for cars, so park outside and spend the day eating all the duck produce you can get your hands on. If you're not afraid or against fois gras then this is the place to try it.

South and west of here takes you into rugby country - Montauban, Toulouse and Carcassone. This is the part of the world that I have trouble leaving every time I visit. Don't hesitate to wonder off the motorway and take a B-road (D-roads in France!) and not worry about where it'll take you because where ever you go, a pretty French village with a bar serving meats and cheese and old men playing boules will await you.

From there you head towards the Med and a 2 hour drive takes you into Montpellier where you'll wonder when you can do it all again :)

Couldn't argue with Vannes or Tours but I tend to do my driving in the southern half of France.

Would suggest St. Emilion instead of Bordeaux though both are worth a visit. Cahors is indeed a lovely little town/city with a very southern feel about it.
NW of Cahors are the beautiful medieval towns of Sarlat, Gourdon and Domme. From Cahors, I'd suggest a route thru Cordes-sur-Ciel and Albi which are both well-worth a visit before hitting Carcassonne. Another beautiful town worth visiting after Carc. is Pézenas near Béziers on the final stretch over to Montpellier.

Check out the market days for the various towns on your route. They are usually worth a visit to pick up locally made craft items and foods.

Aix-en-Provence is worth a visit if you can work it in.
