I really enjoyed Ballyliffen and Glashedy. Stayed in McGrory's of Culdaff - good food, good pub, grand rooms.

Can't suggest places to stay - I was in a camper van the whole time - but there's plenty to choose from up North and it's very cheap - relatively.

If you start at Royal County Down and end at Royal Portrush I'd suggest you check out any of the following:
RCD Annesley - short, tricky and a miniature of the main course
    Kilkeel - densely wooded parkland
Ardglass - quality seaside course and some great clifftop holes
    Spa - good parkland
    Lisburn - classic parkland
Lurgan - a tight course, not for the wayward
Silverwood - municipal and scruffy as anything, but great setting
Down Royal - adventurous heathland (and racecourse)
    Massereene - classic parkland
Galgorm Castle - big estate course with lots of room
Moyola Park - some amazing holes on a big-tree parkland track
Royal Portrush - be sure to play the Valley course as well. Well worth it

The best night I had on my travels was at Castlerock, so get yourself to the bar and you'll be grand.

There are plenty of good courses in Northern Ireland.

If you start with RCD then you probably will stay in Newcastle. It's not that lively but anywhere else in the area is worse.

As Kevin said.....try Ardglass and Kilkeel in the area.

The travelling north.......try the Bangor area.........Clandeboye, Bangor and maybe Carnalea (in that order).

Then head for the North coast and stay in Portrush (or Portstewart or Coleraine). Play both courses at Portrush, then Portstewart, Castlerock and further afield Ballycastle. The old course at Portstewart is ok also (not as good as the others listed) and maybe Bushfoot (9 hole). On the way up you should try Gracehill.
