Chipper Chicken... A HOWTO please

    Folks,

    Not sure if I'm in the right place for this but...

    Anyone ever work in a chipper, or anyone knowledgeable on how they make their Southern Fried Chicken. I've been trying to re-create from home but there's something in the coating that I'm missing...

    Want to avoid having to go out to chipper when I'm sittin in drinking :D

    How do you do the chips too? Special oil or what? My chips never taste the same they seem kinda clean

    You will need:

    Lots of beer,
    Big wooden Club,
    Black Pillow case,
    Van,
    A local Chipper with a good looking female working there,
    more beer,
    Some rope,
    A bit of Whiskey,
    6 Rasher sandwiches,
    and another 6 for good measure.


    How to:
    1. Drink some beer
    2. Have a rasher Sambo
    3. Grab Club, Bag and Van. Drive to Local Chipper.
    4. Kidnap aforementioned Good looking chipper girl. (Eat a Rasher sandwich.)
    5. Put her in the back of the Van. (Drink some beer.)
    6. Steal some of their mercandise. but not all, because I might pop in there later and want some myself. Don't be selfish.
    7. Load up the Van, and eat a few Rasher Sambo's and Drink some beer.
    8. Drive Home.
    9. Take merchandise and your new wimmins in to your House.
    10. Order her to Cook you your Chicken.
    11. Drink Beer and Eat rasher Sandwiches until your chicken arrives.
    12. Eat chicken and Drink beer when it arrives.
    13. Order more Rasher sandwiches and finish chicken until they arrive.
    14. Get more beer. (You may need a friend to do this for you as you don't want your wimmin escaping. Also he will need to get you more Rashers Bread and Chicken from time to time.)
    15. Repeat steps 10-15 for the rest of your life.
    16. Have massive Heart attack and die with a large belly, and larger smile on your face.

    Teh chicken is cooked in a special oven which is a cross between a roaster and a steamer,thats why the chicken is so juicy.
    If its chipper-tasting chips you're after fry them in lard NOT vegetable oil,thats the secret.

    What you need to do is see if any of your mates have access to a trade card that will get you into a cash & carry, I work in a Restaurant and the chef's make the most amazing Southern Fried Chicken and the mix they use is a "bought-in tub", think it could be McDonnells, not 100% sure of the brand name but it's delish and I'd say most brands are similar. It tastes even nicer than a chipper, you get your chicken breast and dip it into beaten egg then put it into the mix and bake it in the oven.

    cajun spice and a tiny bit of piri piri mixed with bread crumbs (pin head are best)

    to get the juicy chipper taste cover the chicken with baking parchment but take it of for the last 10 mins

    Hey, :D

    1. The oil used by chippers in rendered animal Fat it comes in big white blocks when oil levels go down you simple slide in a block of it in the fryer and it melts From a solid to an oil.

    2. Over time the Oil gains " Flavor" From all the chicken, sausages, fish, batter, onion rings, potato cakes etc.

    3. The chips Are Made from Maris piper potatoes- they has 20.2% dry matter
    Which means they are perfect for making crispy chips (also Extremely good for Roast potatoes) these are Par cooked cooked 1/2 way first in a med temperature oil of 170 degrees then finished at a temperature of 190 degrees.

    Season with salt and white vinegar - Thats the Chipper chips question sorted.

    The Southern Fried Chicken-

    You need to fry these in a pot- called a skillet.
    In KFC/Hilly Billy's they use Large Industrial Skillets. they are timed and are pressure cooked in oil.

    The way to do this At home it to get a large cast iron pot of Stainless steel pot Fill with oil heat up to 190 degrees and fry your chicken in there turning once.

    Southern chicken recipes use a blend Of herb.

    All herb are very finely ground and are dried- Thyme,black pepper, Garlic powder, Cayenne powder, Onion Powder, Dried Parsley, Salt are the normal herbs.

    Big chicken Restaurants/Company's have a few extra's but thats a secret
    ;)

    P.S Buttermilk Is a Major ingredient in making Southern Fried Chicken.. Hillybillys is an example ;)

    KFC Use a different/type of churned milk..
