Piano will(should) give you a good understanding of music theory. Bass is similar to guitar obviously but gives you different ways of playing and should let you understand the rhythm section in music a bit better. And of course, there's drums :D

    But would piano be hard?

I would learn whatever it is you are most interested in, or think you would enjoy the most.

I've never learned to play it myself but I don't see any reason why it would be harder than any other instrument

While some people have a natural talent, be under no delusions, any musical instrument is hard to learn to it's full potential. The criteria to play an instrument should not be based on "how easy/hard" it is to learn. A liking for the sound, feel or appearence of a certain instrument is generally what attracts people. Do you have a favourite instrument that stands out, and appeals to you more than others, when you listen to music ? If so, then chances are that this is your instrument.

I play guitar and i gave piano a lash and in some respeacts its harder, basically you just have to be able to concentrate on two different rhythms at the same time (bass hand and treble hand) and if you wanna sing along, then youve 3 things to think about!!

but go for it i say, i wish i had have stuck by it!

Would electric keyboard also be good for learning the basics of music theory?

i always thought saxaphone seemed cool but i suppose that would be a bad instrument to start with

You can't pick it up at the end of a party and have a sing-along, but otherwise it's as good a choice as any. The easiest instrument to learn will be the one you find most appealing or interesting.

The keyboard is an advantage in that the notes are layed out side by side and this makes it easier to "see" scales. Apart from that, music theory is the same no matter what instrument you choose.
