veg in casserole an odd colour!

hey, made casserole today and my red onion and mushroom appear a kinda grey colour - should i be worried? i cook regularly and have not noticed this before! it tastes ok but looks v odd! help as have guests coming!!

When boiled red onoins always go gray. As for the mushrooms, they always look gray to me.

Did you add any red wine? This can also discolour veg.
