If you've cut your calories by say 500 per day to lose weight, what happens once you reach your target weight? Do you start eating more, and wouldn't that risk you putting on weight again? Or can you stick with the 500 a day deficit permanently without wasting away?

If you continue eating 500 cals less than your body needs then you will continue loosing weight.

As soon as you reach your target weight bring the calls back up by 500 so that you are now burning exactly as many as your body takes in. You'll stay at a constant weight.

Yes, and many miss the fact that once you have lost the weight your body needs less calories.

If you are eating a constant 3500kcal a day you will reach a certain weight and then just be stable at that weight. i.e. your body needs that energy just to keep all your fat warm an to move your additional size around, i.e. you are basically carrying around weight all day.

Once you lose the weight you have to adjust your calorie intake accordingly. You certainly do not go back to eating 3500kcal a day. You need less to just get around.

It might no longer be a deficit. It is only a deficit if you know your daily calorie needs, and subtract 500kcal from that. Depends on your original and target weight and hence original and target metabolic needs.

Once you have lost the weight your body does need less, so if your metabolic needs were 3500kcal to have a stable 15stone, and you reduced to 2500kcal a day until you reached 12 stone, then once at 12stone it is easier to just eat 2500kcal a day. i.e. you should not feel as hungry since your body is not "missing" anything.
