Looking to setup some sort of home network with my iMac as the main hub, was thinking of getting AirPort Express Base Station in another room to connect to a surround sound system , now im looking to find a way to control the songs to be played through the system , what options have I ?

If you have an iPhone or iPod Touch, Apple's own "Remote" app is fantastic and gives you the kind of control found in much more expensive hardware, like Sonos gear. Check it out:

And it allows control of both your main iTunes playback on the iMac, as well as controlling any AirPort Express units you may have.

Yes I was thinking that alright , can a 2g version of the phone be used ? Would i be better off getting Apple Tv and sync all my files to that ?

Yes, both the original iPhone and iPhone 3G work fine, as do both generations of the iPod Touch - the app itself works over WiFi after all. I also see no reason to get an Apple TV (unless you already had one), since the iMac can do anything it would do and so much more - since you already were thinking of using the iMac and have one (or more) Airport Express units, all you need is the iPhone/iPod Touch to get up and running IMO.
