employment contract and job changes

I am a permanent employee with a contract of employment. I've just been offered to leave with compensation or take what is basically the same job (lower grade title but same work) at a much lower rate of pay.

If I stay, should I be issued with a new contract of employment or does my existing contract hold until I sign a new one. i.e. can I turn around and say later that I have not signed any new terms and conditions other than verbally agreeing at one point that I would stay. I'm asking from the viewpoint of taking more time than given to consider the situation and if necessary to be able to leave under the same conditions.

Any other time, I'd say that legally your old contract stands until you sign a new one. But In the current labour market, I'd say sign that new contract ASAP, but start job-hunting as soon as the market improves.

The point is that I don't want to sign it and actually get out instead. Staying in a job doesn't guarantee it will be there either in the future.

My question is whether my verbal agreement to stay is valid in the context of a pre-existing signed contract.

You need proper legal advice, then, not just helpful hints from boards.ie.

Go see a lawyer. (If you cannot afford to do that, then you cannot afford to leave your job.).
