Funnily enough members of the grass family including barley had not evolved when that Lebanese weevil was around

I just noted you sig, that explains it. So if grass didn't evolve at that time, what kind of yeast is it? Or are you saying they are making the story up?

Yeast and other microbes would probably outdate most forms life on earth as they are very primitive...................

 :oSh1t, hold on there, I nearly gave a serious reply there for a minute. Two threads in a row. I can sense the ban stick coming my way so you'll have to guess the rest of that reply yourselves.

All I have to say now is I'd drink it.

the yeast appears to be a primitive version of brewing yeast that are used to day and it would probably does not have a defined maltose enzyme pathway developed. As maltose is one of the primary sugars in malt but the are other standard one like fructose and glucose believe

or its has other redundant enzyme pathways that can part metabolize sugars in the malts that have been lost over time
