Getting rid of dock/burdock

    Can anyone help me. I've got lots of burdock, at least that's what I think it is- a reddish woody kind of weed, growing on my site. any ideas on how to get rid of it organically. I won't use weedkiller on my site as I've got a horse, dogs and chickens on the site. I also plan on growing vegetables organically on part of my land next year. what are my options for getting rid of it? I've tried pulling them up but it's hard work and I suspect i'm leaving part of the root behind anyway. Any ideas?
