The Untouchables - a little girl picks up a suitcase and runs after the man shouting "Hey mister!" and then it blows up..is that little girl Kirsten Dunst? I can't see her or anybody credited with the role. It looks like her and she would have been around that age in 1987..

Hot Fuzz has a couple of uncredited cameos, I hear: Cate Blanchett as the masked girlfriend, and Peter Jackson as the Santa Claus who stabs Simon Pegg's character at the start. Weird...

You are the type of what the age is searching for, and what it is afraid it has found. I am so glad that you have never done anything, never carved a statue, or painted a picture, or produced anything outside of yourself! Life has been your art. You have set yourself to music. Your days are your sonnets.

Mercedes McCambridge wasnt originally credited with the voice of the demon in the Exorcist.

Also James Earl Jones wasnt credited with the voice of Darth Vadar when Star Wars was first released.

I could be mistaken but AFAIK the lads from Travis dont get a credit for their cameo appearance as teachers in Son of Rambow.

Twas an interested question so I googled it and found these ones below:
Emilio Estevez was uncredited on Mission Impossible; Angela Bassett was uncredited for Mr. and Mrs Smith.
Seth Green, Tom Sizemore, Jason Robards, and Philip Baker Hall all made uncredited appearances at their own behest in Enemy of the State.
