Jump on the train that goes to Tarragona. It's a really nice little town/city, you'll easily pass an afternoon there. Also, Sitges is also nice, really good beach!

Get a train to Montserratt and get the cable car up the mountain - it's really really nice up there. A bit freaky on the cable car but it's amazing!! Only about 1 hr outside Barcelona.

It's not that bad actually. It can get packed enough, but not in a particularly uncomfortable way. As a general rule though, the further north you go (use the yellow line of the metro), the less packed the beaches are.

Apart from that, Tarragona is a really nice old Roman city was once the capital of the province of Catalunya. Figueres, to the north of Barcelona, is quite nice and was home to Salvador Dalí. Worth a visit anyway if you've got time. As for Sitges, from wiki:

It is also a gay tourist town - in July and August gay men and lesbians visit Sitges as "one of the most popular gay holiday spots in Europe";)

Yeah, if you head up closer to Mar Bella or Bogatell you should be grand (I also hear there's a nudist beach further northeast...). Having said that, I've never seen the main beaches so packed that you couldn't find a spot.
