I'm going to america in a few weeks and i was planning on booking my return ticket once i got there. I've heard people saying that you'll run into trouble if you don't have a return ticket booked. Should i book one before i go and just change the date if needs be?

Yes, you require a return ticket.
You may not always be asked to produce it at immigration but you will not be let in if you don't have one when asked.

They definitely prefer it if you have a return ticket. But having said that, I got in without one. I arrived in New York, was going to travel from coast-to-coast, and then get a single from LA back to London. They asked me a lot of quot of questions, but then let me into the country!
