Image quality settings on 400d - low setting = low noise?

    If I put the image quality down to the medium setting, there would be less pixels in the picture. so would that lead to less noise during long exp shots and high-iso shots?

    or am I just making up science...

    Making up science. Fewer pixels will make it smaller res. You're best to use 'L' or RAW if you want less noise, and use it with a low ISO. Keep the ISO around 400 or less and make your exposure longer... if you can.
