Tank temperatures on a solar dhw set-up will depend on many things amongst them, consumption, water temperature of mains, panel type, panel size and cylinder size. On a 2 panel set-up of 20 evacuated tubes into a 260 litre solar cylinder I can get 30 to 40 degrees as a baseline all year and from March to October 60 degrees plus.

On the question of degrees:) how are these panels orientated vis a vis due south and at what slope to horizontal and at what height above ground?

They are due south and 45 degrees at a height of about 4.5m. With evacuated tubes you can expect very little decrease in efficiency when facing anything from SE to SW and at angles of 25 to 65 dgrees - not so with flat panels which tend to have dramatic drop off in performace if not placed at the ideal slope and direction. The height above ground level is not significant but obviously shading from trees or buildings is - mine are not shaded. Evacuated tubes are not affected by strong wind either whereas flat panels tend to cool significantly unless they are of the double glazed variety.
