I'm looking at two courses at the moment for IT:
One is Computer Science in DIT (DT228, BSc In Computer Science): http://www.comp.dit.ie/dt228/
The other is Multimedia Systems/Web Design in Dun Laoghaire IADT:
    http://www.iadt.ie/en/ProspectiveStudents/SchoolsCourses/SchoolofCreativeTechnologies/BScHonoursinComputingMultimediaSystemsWebDesign/

I'm interested in web design and software engineering, which course would you say sounds better? The IADT one is fairly new, other than that I don't know much about either...

It all depends on what you want to do. The BSc in Computer Science will give you a broad, overall knowledge of computers, whereas the Multimedia Systems is more specialised. Also, the BSc would cover programming in detail, which would allow you to branch into Web Programming, I doubt the reverse is true.

Personally, and speaking as somebody who lectures in Computers/IT, I would say the BSc in Computer Science is better. But then I am biased :D and it does depend on what you want to do.
