Would Santa Ponsa be too quiet in May?

A group of us (lads) were thinking of booking Santa Ponsa for the 17th of May for a week. Has anyone else gone at this time? Is it very quiet and are all the bars, restaurants, attractions etc open for the season. Any guidance would be appreciated. Cheers
