Right, I'm thinking of playing as much as possible on non-dollar denominated sites to cut down on exchange rate fluctuations and transaction fees, so a list of those would help.

Obviously the poker sites which are just a wing of the main UK-based bookmakers and exchanges will have accounts which are denominated in euro. eg betfair, Ladbrokes, William Hill etc.

What other sites use euro as currency, or even have an option to do so?

Yes, most people will have the sportsbook in euro so you can just store your roll there and transfer it to poker when you want to play.

Betfair keep your account in € and the buy in cash out to $ tables is always done at the same rate so no fluctuations.
