    How do you know if Butternut Squash is ripe or gone off? I cut open a really flaky/dry one last night and usually they're really dense and oily

    It shouldn't be oily. The flesh inside gets increasingly orange as it ripens, your's may be over-ripe.

    Was it the flesh that was flakey?

    probably meant moist instead of oily
