Santa is bringing the 2 nippers the following
    Wii console
    2 controllers
    1 nunchuck
    Games
    Wii sports
    Wii play
    Wario Wares
Mario & Sonic at the Olympics

Do I need any more controllers or do most of the games just allow 2 people to play at a time?
If 4 people can play at the same time, do I need to get 2 more controllers?
Also what does the nunchuck do and do I need to have the same number of them as controllers?

Looks like you are good to go. You have a controller and nunchuck with the Wii, and you have bought one of each.

The nunchuck provides additional controls, and is required for maybe half the games out there.

Four players need four controller/nunchuck sets, but realistically, not many games benefit from this. Wii Sports is a good example. Golf and bowling are turn based, so one controller is enough. Boxing allows two players, and requires a controller and nunchuck each. Tennis can allow four players play simultaneously, but do you have a room big enough to allow four people swing their arms in front of the telly....I'd say that Santa has done his job well :)

do you have 2 controllers + 2 nun chuks?

if you dont have 2 of each you will be limited in the games you can play.
2 sets will be plenty, theres never much demand for 4 people to play at the same time!
its usually just as fun to laugh at the other contestants while you catch your breath :)

Not sure if you want 4 people to play at once you'll be fine with 2 controllers and 1 nunchuck. On games like bowling you can use 1 controller for 4 people but you'll need 4 controllers for tennis, in the boxing each player needs a controller and nunchuck to play and i think its it same in Mario & Sonic at the Olympics.
I think you'll be fine if you even just get another nunchuck for now and if you feel the need after christmas maybe buy more.
I have 4 controllers, 4 nunchucks, and 2 classic controllers for the VC ganes and i honestly reckon i could easily get by with just 1 classic controller, 2 controllers and 2 nunchucks.

The controller and the nunchuck work together in some games. For most multiplayer games two wii controllers are all you need, but some games require the nunchuck. In these cases you attach the nunchuck to the remote and it works as your movement control while the remote is your attack control (I appreciate that you are not a gamer and that doesn't mean too much to you, but there is a big but coming...) BUT if your kids want to play against each other in boxing on Wii Sports they will need a second nunchuck. Thye'll be fine without it, and have a blast, but if they like to beat the virtual head of one another (and you have a room big enough for it - I don't) you will need a second nunchuck.
