I have a lot of the recent successful ones but didn't like them enough to remember their names!
I saw one about 10 or so years ago - it's actually Mexican I think, called Like Water For Chocolate, which I thoroughly enjoyed. Hope that helps.
Y Tu Mama Tambien is a recent one, and All About My Mother.

    Have a look at www.screenclick.com

Pan's Labyrinth and The Devil's Backbone are two films I highly recommend.

Although I think he's over-rated, Pedro Almodovar's movies are highly feted Spanish movies.

As Ixoy points out, Almodovar is often overrated, but I find him quite an interesting director. My favourite of his would be the early Tie Me Up Tie Me Down!. His newer ones - Talk to Her, Volver, All About My Mother - are well worth a watch too.

The previously mentioned Y Tu Mama Tambien is my favourite Spanish language film. Check it out.

As Karl said, The Devil's Backbone is excellent. I recommend checking it out before Pan's.

Not a big watcher of Spanish language film, so those are the only recommendations and +1 recommendations I can think of.

I haven't seen many, but I would count Intacto as one of my favourite films, Spanish or not.

Thanks for the suggestons! keep em coming!

El mariachi is a good idea, and it doesn't bother me if it's cheap, Mr. Rodriguez will always have my respeto.

Thesis is a very good thriller. And worth a watch.

The same director also did Open Your Eyes which was remade into Vanilla Sky in the US. It's much better than the remake of course.

H2 Diary of a serial killer is ok.

I downloaded a few great ones recently to help me learn Spanish

    Jamón, jamón
    Abre los ojos
    Todo sobre mi madre
    Volver
    Y tu mamá también

Apart from the last one, they all (coincidently) feature Penélope Cruz :)

El Mariachi is also a classic.

    The Sea Inside
    The Motorcylce Diaries
    Open Your Eyes
    Maria Full of Grace
    Bad Education

    All very good

    Diarios De Motocicleta
    Tesis
    El Dia De La Bestia
    Abre Los Ojos
    Sin Noticia De Dios
    Devil's Backbone
    Pan's Labyrinth
    Y Tu Mama Tambien

All fine films and well worth watching, but doubly so if you're looking for exposure to the language. The only thing I would say as a spanish speaker is be wary of watching too many South American films; there are enough differences between the dialects they speak and Castilian Spanish for it to cause a bit of confusion if you're learning the language.
