Thai Green Curry

    Hey not a very good cook but have friends coming on sat and want to cook a curry... I have a tub of green curry paste ( its a start) Wondering if anyone has any good quick and easy recipes!!!
    Also a low calorie dessert thats easy to cook also would be so appreciated!!!

    Basically stir fry some meat and veg, add the curry paste and some coconut milk.

    Cook for about a half hour.

    Bish bosh bang, serve with rice.

    Make sure you cook the paste out a bit though, otherwise it has a bit of a raw flavour to it. True for any kind of curry paste in fact, not just Thai ones.

    Fry the paste with a little extra oil & some garlic & ginger for 2 or 3 mins
    Add a can of coconut milk & bring to a simmer
    Add chopped chicken or beef & simmer for 20 mins
    Add whatever vegetables you fancy
    Add juice of 1 lime & 1 tbsp each of soy sauce & fish sauce
    Simmer for another 10 mins
    Serve with rice or noodles
    Garnish with fresh coriander & finely chopped scallions

    As previously advised, it is best to cook the paste for a bit to remove the raw flavour. The paste will have a good flavour but fry some shallot, garlic and lemongrass at the start to give the curry some oomph.

    Add a tin of coconut milk and some kaffir lime leaves, and some deseeded chilli. Chicken should be added raw to the sauce - don't bother to fry it first, it will toughen, particularly if it is breast meat. Chicken thighs can be fried off first because they have more fat than breast meat.

    A couple of tablespoons of fish sauce and lime juice. Garnish with spring onion, coriander and some scalded bean sprouts. A thai curry sauce should be thin rather than a thick gravy. It is traditional to serve rice at any thai meal - in fact, a common thai greeting is 'have you eaten rice yet?'

    I add brown sugar to taste to the sauce to bring out the sweetness.
