Booking last minute on St Stephens day

Hi,want to be away for new years.Hopefully somewhere warm in Europe.Would travel from the 28th December maybe til Jan 2nd.Was going to try and book something on Stephens day. Has anyone done this?Is it possible?Would i get a good deal? Cheers
