Two sections of old maps I found, I imagine both are in the early 1800s.

First, the then Head Police Office in Dublin Castle (demolished, now outside the castle, part apartmens, part public square). It shows the room layouts, even the doors and windows, the number of steps on a stairs and even fireplaces.

Second, an old court house (demolished, now apartments) on the junction of New Bride Street and Camden Row. It shows the room layouts, the doors and windows as before, but it also shows where the cells are and a dashed line for the prison bars.

They still have the gallows in Mountjoy, if you're interested. Even 50 odd years after the last execution, it's still a pretty grim place to go.
