    You mentioned JKA, just wondering
is there more than one JKA in ireland?

Also, what is the difference between JKA
    and JKS karate?

No, the JKA is an international organisation that has seperate branches in different countries. i.e JKA Ireland, JKA France etc etc.

JKA and JKS are two completely different karate organisations.

The org now known as the JKS was originally a bunch of JKA instructors who split off when they didn't like the direction the JKA were taking. I've never trained in a fully JKA-affiliated club, but from what I've seen of the style, modern JKS is more fluid and dynamic than modern JKA (in general of course, individual clubs and instructors might have different interpretations).

There are some vids on youtube, just put in 'JKS'. Including some of Asai sensei who died last year (trained with him a couple years back, he's like the Yoda of karate!).

Check out this team Unsu from this year's JKS world championship in Okinawa.
