Basically lately I've found myself getting into films about sophisticated organised crime, or in short, Ocean's 11-13. Scarface too. (I think it's the suits!)
And now I've run dry, and I'm hoping someone on here will be able to recommend me some similar movies, so I can kill some time over this next week off I've got.
    Cheers.

There are plenty of good Asian films about 'organised crime' - Hana Bi is really wonderful, and the works of Takeshi Miike are interesting and stylish, if often a little extreme for some tastes (Dead or Alive etc...). A History of Violence is excellent too. The Sting is a classic, and a clear predecessor to the new Ocean's films

Not my favourite genre, but plenty of good ones out there.

good call on Heat and infernal affairs.

as great a movies as they are, I wouldnt have really called casino and goodfellas sophisticated crime? however along those lines of movies, A Bronx Tale is also excellent.

no movies too add, just one word of warning watch "Infernal Affairs" before the crapfest that is "The Departed"

Strange I thought the OP meant something with a group of characters organising a crime instead of mafia but hey there you go. I'll recommend Sneakers which is just great fun.

Thought both films were crap myself.

I second "The Sting" for the caper type movie and would also add, in the same vein, "Midnight Sting", which is basically a remake of the Sting, but it has James Woods in it, so it rocks!

I third (Can one 'third' something? Does any given thing have enough endorsements once it has been seconded?) the Sting. Really good film.

"It's LONERGAN. DOYLE LONERGAN! You're going to remember that Mr. Shaw or you're going to get yourself another card game!"

Heat is top notch stuff too, as are most of the other ones mentioned above; the Scorsese flicks (Goodfellas, Casino, Mean Streets, Departed, etc), and the first two Godfather movies defy comparison. Truly operatic, Shakesperian stuff.

Nothing else really springs to mind. But you have enough there to keep you going for a while.

Actually wait, check out Chinatown! That is kind of about organized crime. On a similair note to Chinatown, you can fit in film noir. There is a fair degree of cross-over appeal, in my opinion. For a modern piece of noir, see LA Confidential. The older stuff includes the Maltese Falcon, Double Indemnity, Casablanca, and many others.

THE KILLING - from the '50s - you'll see references to this movie in all of the above titles.
