I have a stack load of MD I want to transfer to MP3. I have a double ended 3.5mm jack so was going to just hook the md to my laptop via the mic in socket but how do you record to MP3?

If it is a HiMD recorder then you can do it directly via usb. Otherwise just connect the MD lineout to the laptop line in and use a program like audacity
