My meals, any suggestions?

Following on from a thread i posted a couple of weeks ago about my 6 meals a day, i've been going good for the last couple of weeks, and with the exception of yesterday i've been very disciplined. I was working late thursday night and overslept yesterday morning, so i didn't have any time to make up my food.

So here's what i've been eating:
9am decent sized bowl of porridge with a little honey, sometimes a banana

11am 2 slices of mccambridge brown bread with peanut butter and a bit of jam in between (gonna get sugar free jam today to use instead) and a banana/apple/orange, depending on what i have at home.

2pm chopped up chicken fillet with mixed peppers, sweetcorn, lettuce, a tiny bit of mayo (about a teaspoon or so) and some brown pasta or brown rice, all mixed up in a salad type thing. sometimes i put a little bit of fajita seasoning on the chicken, but i'm talking the very, very slightest amount. Another bit of fruit, or 2 pieces.

    5pm as at 11am

8pm usually chicken of some variety with veggies and a potato. one night it was spaghetti bolognese, but with brown rice. My mam had already made it, so i couldn't throw it out. She makes it with loads of veggies and lean mince, so it's not too bad (i think?)

yesterday i managed to have fruit instead of my 11am/5pm snacks, and a brown bap with cold chicken pieces, lettuce and some mixed salad with again, more fruit.

I find it tough to get in a 6th meal, but it'd usually just be fruit or another peanut butter and jam on mccambridge brown bread sandwich. I really like that one. Feckin gorgeous!

Any suggestions for variations? I can see myself getting bored of it after a while. I have access to a microwave and fridge in the canteen in work (well in one of my jobs!) I'd also have a cup of coffee in the morning, but i don't think that's bad (or is it?)

I was a bit sick too this week, so exericise was almost nil except cycling to work, and a light workout on monday night.

I'm 22yo, 6ft Male, 12.5-13stone, i'm training for the dublin triathlon again and i'm leanish, just looking to have more definition and lower bf%. i have a 4pack that can just about be seen, so i'm trying to make it more visible while training for the tri.

Advice, critisism, all that is very welcome. apologies for the lengthy post.
