Say you were in a Kibbutz, working as a volunteer, minding an elderly relative...

get any oul mickey mouse job for a few weeks and then apply for a better job that you actually want. Put down on your cv that you worked in x from 2000-2006 and then your new mickey mouse job 2007-present. It will appear like there are no gaps.

I remember a similar post coming up recently.

Just say a parent developed a back problem and you needed to be around full-time to help them out.

Sciatica is usually a good option. It's a trapped nerve in your back that makes you fairly immobile for 6 months to a year. It usually goes away of its own accord during that period.

What ever excuse you use, keep it fairly simple and boring so that you don't get grilled too hard on the details.

I kinda know your predicament. I had an interview last week and to fill in gaps I said I was working with my uncle who's a farmer. Not that I ever did.
Of course if you live in a city it might not be as plausible.
There's plenty of things you can say.
