I've been looking at the governments customs/duty site and my head is sore.

Here is what I want to do:

By products from wholesalers in the USA.
Sell products in Ireland via my retail business.

I am not currently vat registered.

Let's say I buy €100 worth of stock from the USA. Postage might be €10.

What duty do I have to pay to customs?

You have to pay 21% VAT on everything from outside the EU. I think that duty is 2-4% depending on the goods, but it is not that much. The VAT is charged on the value of the good plus delivery.
