[Recipe] The King of Mustard Heat!!!

    With Cinco de Mayo coming up and the related festivities, I've had a chance to taste alot of mexican/hispanic foods.

    I came across this at a friends BBQ and, if you can tolerate the heat - it's probably the nicest mustard I've EVER had.


    What you need.

    Gloves (trust me, you need them)
    Goggles (day do naaathing)

    Recipe Ingredients.
    2-4 Habanero peppers* - seeded.
    2 tbls Coleman's mustard powder
    1 Ripe Papaya fruit ** - peeled, seeded and diced.
    1/4 cup hot water
    1 cup onion - diced
    1/4 cup malt vinegar
    2 cloves garlic - minced
    2 tbls brown sugar
    1 tbls dark rum
    1/4 tsp turmeric
    1 tsp salt

    * Number of Habanero's should depend on size and how hot you can handle it.

    ** If you can't get Papaya, and equiv. amount of Mango or Apricots should suffice.

    Method

    Make up the msutard powder with the water (mix and sit for 5 mins). Add everything to a pot and sit on a low heat, simmering and stirring until it all dissolves. Mixture should be thick - takes about 45 mins.

    Let it cool, put it in a processor and transfer it to a steam/dishwasher cleaned jar.

    Should last a couple of months in the fridge.

    Absolutely fantastic with any meat and strong cheddars, as a BBQ marinade or on burgers or hotdogs.

    It's hot though, so if you're up for a challenge go for it, if you don't like hot food. Beware.
